Food Storage Friday-Chicken Tortilla Soup

We're nearing the end of 'soup season' which is a real bummer because of how easy soup is to whip up for dinner.


Today's meal, Chicken Tortilla Soup, is merely a drop in the pot and cook. Love those.



Ingredients: Tomato sauce, crushed tomatoes, corn, green chilies, canned chicken, garlic salt, oregano, sugar and chili powder (and water, not pictured)


Open and dump all your canned items into the pot.



Add the water


and sugar and spices





Open the canned chicken, drain and then shred with two forks. Add to pot.

Bring the soup to a boil, then lower the heat and simmer for 20 minutes or so.


Top with crispy tortilla strips (coming Wednesday) and serve. Delicious!


Chicken Tortilla Soup
adapted from Favorites

1-28oz can crushed tomatoes
2-8oz cans tomato sauce
1/2 tsp garlic salt
4 cups water
2 Tbsp sugar
3 tsp chili powder
1/2 tsp oregano
1-4oz can diced green chilies
1-13oz can chicken

Combine in a large pot. Bring to a boil. Lower heat and simmer for 20 minutes. Stuff your face.

There's a "soup season"? No way! I love soup a-a-a-ll year. Just go to lighter ones with lighter broth and more veggies in the summer.

There's nothing more soothing on your tummy than a nice light, warm soup to relax your tummy after dealing with the heat. Yes, I do know what hot is. I grew up in Phx and now live in Tucson with no AC, just swamp cooler.

No worry about the tortilla crisps, ya'll always come up with something!

I'm sad that soup season is almost over too. I love soup! But my husband will be happy that I'll start making salads instead; he loves salad.

I'm with Sharron. I grew up in Phoenix, AZ, quite possibly one of the hottest places on earth, and grew up eating soup year round. Also a favorite dinner dish on the island of Oahu is oxtail soup. There's no winter there.

Tortilla soup is my favorite soup EVER. I just made a batch yesterday and had it for lunch and dinner, and will have it for lunch again today! My recipe is very similar to yours and I told my husband yesterday how food storage friendly it is since I have started canning chicken and beans.

Something to add to your tortilla soup that I do is add a can of black beans! It is so good.

oh yeah, and I also add 1 tsp of cumin. I love that taco/fajita flavor it adds.

If you store instant masa mix in your food storage, you can make your own tortillas and then fry them up for the tortilla crisps. This way it is completely f.s. friendly. :)

May I suggest using the chicken water as part of the 4 cups of water you need? You won't be wasting, in an emergency you'll have a few ounces more water, and the chicken water will add a level of flavor to the soup.

We eat cold soups in the summer even some fruity ones, or vichyssoises, and gazpachos are great too.
You must try some.

If this is the same soup you brought our family after baby arrived, then I can vouch for its yumminess! I have been waiting for the recipe to show up!

As a side note, any chance you will come upon a few extra hours to move the recipes over to the test kitchen page so they are all in the same place?

We love Tortilla Soup and I never thought I could make it from food storage items. Way to be!
I've got pints of bottled chicken in my food storage and never realized I had the whole fixin's for tortilla soup.

Oh GOSH that looks good! I had a killer chicken tortilla soup at Flour Girls and Dough Boys in American Fork, UT last week for my birthday. So worth checking out if you're local!

I make this for my family all the time and they love it. Even my 2 and 4 year old. I like to change it up a bit and don't put the corn in but instead add 1 cup of lentils. It makes it a thick soup (the lentils absorb a lot of the liquid) but it tastes good. It is a great way to get my kids to eat lentils!
